Croissant Mix (10kg)
Dr.Baker Croissant Mix — designed to keep your products fresh for as long as possible with consistent production quality.
Features:

• Easy and quick to prepare
For best results — dough ingredients:
• 10 kg Dr.Baker croissant powder
• 150 g yeast
• 4 litres water (preferably iced water to keep dough temperature at a maximum of 22 °C)
Preparation:
• Mix the powder with the yeast using an electric mixer
• Wrap the dough tightly in plastic film
• Chill the dough in the freezer for 30 minutes to ensure the dough and butter have the same folding consistency
• Divide the dough into medium-sized balls and allow to rest for 5 minutes
• Roll the dough out on a floured surface and add Dr.Baker butter at a ratio of 1.5 kg butter per 5 kg dough
• Add the desired filling, then roll the dough from the tip of the triangle to the base in a crescent shape
• Place the croissants in buttered trays and cover until they hold their final shape
• Brush the surface with egg wash
• Bake in an oven at 190 °C for 15 to 20 minutes until golden brown
• Available in 10 kg packs
• Shelf life: 12 months from the production date
• Store in a cool, dry, well-ventilated place away from direct sunlight
